Chicken + Zucchini Kefte

TESTING OUT THE RECIPES OF GWYNETH PALTROW’S “THE CLEAN PLATE” : My girl friend, Adriana, was visiting a few weeks ago and really made me consider the foods I was eating and preparing for others. While preparing meals, we discussed “Clean Eating”, healthy lifestyle and most importantly wellness. While I prepare most of my meals at home, I did start realizing that there was some room for improvement in how I was taking care of myself…and those that surrounded me. I asked her for a recommendation of a good cookbook to learn a bit more. Without hesitation she recomended Gwynneth Paltrow’s “The Clean Plate”.

My friend Brian is visiting from New York this week, and I thought there would be no better time to start testing some of these recipes to see how easy they were to prepare, how delicious they were to consume, and - most importantly - how they made us feel afterwords. We made these together, and with very little effort, we had dinner grilling in the kitchen and the house was perfumed with scents of the east. We served with a big bowl of romaine leaves, sliced cucumber, fresh herbs and tahini sauce. This was an immensely satisfying meal that didn’t allow us to go to bed feeling heavy. Seriously, we enjoyed these SO much. I would love to have a big dinner party and set big bowls full in the center of the dining table and just let people snack all night and make their own kebabs. Hmmm……now there is an idea.

This week I have been testing the recipes from Gwyneth Paltrow's "The Clean Table" in my own kitchen. This was the first recipe that I tried, and it was an absolute success.

Ingredients

FOR THE KEBABS

Instructions

  1. To make the kebabs, soak 12 small wooden skewers in water for 20 minutes.
  2. In a small bowl, combine zucchini and 1/2 teaspoon of the salt and let sit for 5 minutes. Squeeze out as much liquid as possible.
  3. In a large bowl, combine the zucchini, chicken, scallions, cilantro, mint, garlic, ginger cumin, coriander, cinnamon, and tahini. Divide the mixture into 12 portions, then, with damp hands, shape each portion around the skewer
  4. Heat a grill or grill pan to medium - high. Brush the kebabs with a bit of olive oil , then grill for 8 to 10 minutes on each side, until cooked through. Place the kebabs on a platter with whole lettuce leaves, the cucumber, cilantro, and mint. Serve with the dressing.
